This highly aromatic, vibrant coffee comes from the Chelbesa washing station in Gedeb, Ethiopia. Gedeb is one of our favorite sub-regions of the larger, more famous Yirgacheffe region. Coffees from here tend to have a refined, intense sweetness, alongside the iconic fruit and floral qualities. Over 1,000 small-holder producers transport their coffee cherries, usually by foot or mule, to the Chelbesa mill. The mill is owned by three brothers from the Roba family, who do a meticulous job of keeping quality standards very high. Cherries are carefully sorted before being washed, de-pulped, fermented for at least 36 hours, then dried on raised beds for 10-12 days. This coffee is grown at extremely high elevations of up to 2,200m, and the bean itself is very dense.
Chelbessa is an intense, sweet cup with lots of blueberry, vanilla and floral notes. It's balanced and refined, with a delicate citrus acidity. The finish reminds us of a dry white wine or black tea, lingering on the tongue. This is a dynamic, memorable cup that perfectly represents everything we love about Gedeb coffees.
