The Colombia La Joya is brought to you by our long-time producing partner, Yermy Pedraza. This year's harvest is clean, complex and sweet. The dry aroma is filled with baking spices, ripe red berries and milk chocolate. The cup is well-structured and complex, with a honey and graham cracker sweetness. As it cools a plethora of fruit tones come out to play, including peaches, blackberries and red wine. It has a round acidity, a medium body and a sweet, lingering finish. In addition to running his family's farm, Yermy also maintains a career in engineering. A few years back he combined his engineering and agronomy skills by constructing African style raised beds for drying his coffee, instead of drying on concrete patios which is the custom in Colombia. Raised beds ensure more airflow and a more even dry, leading to better quality. This attention to detail has wowed us year after year and we hope to continue our relationship with Mr. Pedraza for years to come.
